Springs Tavern Dan and Charlene DeSmet took over the building that housed Wolfie’s Tavern for more than 80 years, completely renovating the space for recently opened Springs Tavern. The cozy interior features restored hardwood floors with wainscoting and soft blue walls, an oak bar and historical framed photos of Springs, East Hampton and previous iterations of the Tavern along with work by local artists. Chef Michael Ruggiero (formerly Nick & Toni’s and Harvest on Fort Pond) is serving American pub-style fare like calamari fritti, veggie Reubens and Baja fish tacos with charred corn tortillas, pickled cabbage and cilantro-chile crema.
